I MASSACRED the filet process though. NOT too **** good at it. I will try again this next weekend, and see if I do a better job.

My dad has eaten them and said they taste pretty good. He cooked some at a fish fry and didn't tell anyone and they ate it up.
I assume they would & I've eaten many a meal with them being the main course growing up. Actually fished for them when the backwaters came up in the spring. Heck we even walked the flats in the backwaters of White Oak Creek on Cumberland when they were up spawning & would club them. I gigged them all the time & even shot them with a 22 rifle. Had a buddy that bow fished them & brought me all he shot too. I honestly don't see why the carp has such a stigma that goes with it. A striper has the same blood vessel as a carp does, but in a carp somehow it got named a mud vein when it's actually a blood vessel that oxygenates their bodys because of the size the reach & their quick growth rate. In stripers most just call it red meat when it's the same exact thing. I honestly like eating those big old flaky white carp fillets pretty dang well & would just as soon to it as striper. I had some pieces tonight, and could not tell it from the bass and hybrid I had. Except it was much bigger /flakier fish.
VERY, VERY good.
