That would depend on the rake of the prop. I used to fish a tournament with a guy that had a 20.5 Stratos with the same motor and we GPS'ed that rig at 73mph with 50 gallons of gas and 575lbs of (me and him) and all our tackle.

I bought a 21' Stratos whit a 2000 Johnson 225 HO, it has a three blade 24p Raker on it. I can run about 66 mph at 5500 rpm. It also has a 6" set back jack plate. Should I expect more from this rig, and is this enough prop?

Any idea what prop he was running?
i'd try a 26 raker or a 25 renegade and start with the propshaft 4" below the pad and raise it up until it loses performance,watch the water press.
generally the raker will run a little higher than the renegade.the new rakers are awesome but expensive.check bass boat central owners list there may be few on there to give you a starting point too.This hull isn't as fast as the the xl series but you may use some 201 set ups as a reference if there aren't any ss's on there.If the motor hasn't been tuned for awhile that will help too,if you run heavy the renegade will be better than the raker,most times.What you may lose on top 3mph you will gain in holeshot.
How high is the motor on the jack plate? I think you should be seeing more speed.

I have a 10" set back jack plate. The center of the nose on the lower unit is 5" below the boat. I can get an 1 1/2" on the jack plate, and I have one ome hole on the motor to go up.
you need to come up some for sure.when you put it further back it actually lowers the motor.say the 5" below on the 10" will be 41\4 or so on a 6",keep raising you should find a sweet spot in the 21\2 to 4 in range.the raker is a surface prop it should be blowing out just a little when you take off,you will likely see a 300rpm increase,that 24 should be close to 5900 on a 225.
one other thing too,sometime too much setback is worse than none,if you don't get good results go to a 6" plate.the motor has to lever the front of the boat and if the plate sets the motor too far back it won't lift the hull up on the pad,too much weight forward for the prop to lift.sorta like a skinny man try to seesaw with a big girl.it don't work i've tried it
Yea but I bet it was fun until one of your friends seen you. I was thinking that same thing about the 10" and the leverage, but did not think out it being in the water deeper but I can see that.
