In Louisiana they use chicken parts,but I'd say any meat or dead fish,etc would work.
I always found it easy to just seine them out of creeks in Kentucky, in the creek by my house,I can take a 5 gallon bucket and drag it along and catch some crawfish.

I used a crawfish trap a few times. I usually used the same thing we put in crab traps, and it worked really good. Chicken necks and backs. Also we would tie those up in a plastic bag and set them in the sun for a day first. It will almost make you gag, but it really seemed to do the trick.
I have a buddy that just puts dead bluegill cut in half in them and does very well.
I used to fish for them with little pieces of bacon in the creek. We would always come home with a bucket full. Try hanging a few strips raw in the trap and I bet you have some luck.
We just hang the head from a bluegill fillet in there. Sometimes two, because they will pick one clean over night.

get a small can of dog food and use an old pointed type can opener, 2 small holes works great
The best advice I can give is don't use the traps. Find a creek and get a friend and a seine net - you can catch as many as you want.

Cut the top off a 2 liter bottle, puts rocks in the bottom of the bottle, bait the trap, duct tape the top back on reverse, so the top of the bottle is pointing to the bottom of the bottle, put it in the water laying on its side.
Cut a 2-3 inch hole in the platic top of a coffee can. Place bait in can. Replace top. Place can in water, making sure the top is several inches underwater and build a bridge to the top with stones and rocks so that the crawdads can make it to the hole in the top.
Use a minnow trap.
