Fish Hard!!
I always keep fish on ice during warm weather months. It just assures the meat is fresh. I would gut the trout first and then put it on ice. Trout don't last too long without ice in hot weather.
The best recipe for trout is .........
Throw them over the hill and stop at kroger and get you something that doesn't taste like crap !!!!!!!!!!!!
Trout is GREAT to eat. Better than bluegill I think well the stocker size trout anyways. KDFW stocks alot of small lakes around eastern KY for people to eat the trout if caught. I would put them on ice. I have tried keeping them in the livewell of my boat before and they died not long after I caught them.
Gutting and ice are the best thing to do, but also dont forget to cut out as much of the gills as you can.We always did that to great lakes trout and salmon, also drain the melted ice water as often as you can.
Better make sure you're not on the water when you gutting them. Just put them on ice and they will be just find.

As others said...........Do NOT clean them on the water.
THAT is illegal, and the CO will THROW THE BOOK AT YOU........
At Cumberland, there is a cleaning station at the top of the ramp at Kendall. GREAT facilities.
Clean them there, or clean them at HOME..........

Just throw them on ice as soon as you catch them, while they're alive. Keep them on ice until you're ready to clean them, and they'll be fine. I've seen some folks on long fishing trips put their fish on dry ice, but I wouldn't recommend that. That will freeze them hard as a rock, so hard they'll get freezer burn! Plus that stuff can be dangerous. And if they're of any size (bigger than the stockers they put in the local ponds) let me suggest you do a butterfly fillet on them, and stuff them. Yum!
