I have always been told they dig into the mud in the cold weather in order to keep warm, so I don't know if that counts as hibernating or not. I even tried googling it and couldn't find out anything.

Seen 1 today while i was at the creek.Do they dig in for winter & just starting too come out or are they there all winter?I was on Drakes creek south of Bowling Green.

There is little meat in their tails during cold weather/off season. I'm not sure if they use it like a fat reserve during hard times,but I learned this in Louisiana where they eat them regularly.That;s why they have a crawfish season.I never see them in the creek on my farm in the winter,but see their mudholes.
