You should have a few other types of baits with you. You may not need/use them but it does not hurt to be prepared.

I was wondering how much bait you should have with you during tournaments. I am not going to brag but i am a pretty good fisherman with cranks. i usually have one crank for every depth. I was wondering if i should use soft plastics for deep depths?

There is not a set number of baits you should have- you only need to use what you see confident you'll catch fish with- be it 5 baits or 500.
I probably have 100-150 cranks in the boat with me at all times, 50 or so spinnerbaits, 30-40 jigs, & about 30 lbs. of plastics, along with top waters, sinkers, hooks etc.. This is not counting the totes of new stuff I have in the shed still in packages. I buy the stuff I use the most & have the most confidence in when it goes on sale, I buy them & alot of them at once. May be a little much, but I am always thinking if I leave something at home, that will be the lure they will be wanting. The better half says that I have a bass pro shop in the boat. LOL.

Depends on the time of year.
I have Plano boxes that are basically organized by season, so it's not hard to know which to leave at home and which to take with me.
However I always have a large assortment of soft plastics and lots of terminal tackle with me regardless of season....
For me its less is better,3 rods rigged & 1 or 2 extra baits of the same as i rigged.But then i'm only doing kayak tournaments now.Don't forget the camera because its all CPR for me now.
