    recipe for blue catfish

    I would like to know if anyone has a good recipe for blue catfish. I have tried fixing it twice and it didn't have a good taste and the texture was real rubbery and wouldn't flake like other catfish or any other type of fish. If you know of any way that will help please let me know.

    Cut it thin.If you have thick piece,use a sharp knife and split it.Dip it in some Andys red and put in the deep fryer for 5 minutes.Also be sure to cut out all the red in it.

    You might need to cut out the blood line. It is the darker red meat towards the top of the filet. The blood line can make the fish taste gamey.

    Here are some recipe for catfish that I like.

    Beer and Catfish
    2 c self-rising flour
    1 c beer; (your favorite brand) Budlight lol
    1 garlic powder; to taste
    1 salt and pepper; to taste
    4 3-5 oz. catfish fillets; cut
    1 vegetable oil; for frying

    Directions:
    Combine 1 cup flour, beer, garlic salt, salt and pepper in a bowl. Mix well. Dip catfish strips in remaining flour and then in batter. Fry in hot oil in a deep-fryer or skillet until golden brown. Drain on absorbent towels.



    Stuffed Catfish

    4 catfish cleaned and skinned
    1 lb. crab meat
    1 pt, oysters
    1/2 lb. salad shrimp
    1 bag Italian bread crumbs (seasoned)
    1 lemon
    1 bunch spring onions (use chopped red onion if spring onions not available)
    1 clove garlic
    1 cup white wine

    steam and chop oysters, mix oyster, crab meat, and shrimp with bread crumbs, juice from lemon, chopped onion and garlic in bowl.

    stuff mix in cavity of catfish, sprinkle pinch of zest from lemon on fish, add 1/4 cup white wine and wrap in aluminum foil, grill on low heat or bake at 325 deg. for 35 min. (may be longer for bigger fish) till fish are done and fork flakey.

    makes 4 servings
    prep time---35 min
    cook time--35 to 45 min.



    Orange Catfish - Great recipe for grilling catfish

    two med. fillets
    one large orange
    1 cup maple syrup
    1/2 cup crushed walnuts
    salt/pepper
    garlic (optional)

    mix the syrup and juice from orange in zip lock bag, add fillets and put in fridge for a couple hours.

    make a tin foil bag, lay fillets flat and top with walnuts and zest from orange, add salt/pepper and garlic, cover with mix from zip lock bag and seal tinfoil bag.

    grill on low heat for about 3/4 hour ( depends in fillets size)
    when opening tinfoil bag be careful, steam will escape and will burn,
    serve with fresh veggies and creamed potatoes for a full and filling meal to be proud of serving.


    prep time.....15 min.
    fridge time....2 hours
    cook time.....45 min.


    Bacon and Cheese Stuffed Catfish

    Servings: 3-4
    Prep Time:: Less than 15 minutes
    Cook Time: Less than 15 minutes
    Cooking Method: Baked
    Meal Type: Entree
    Main Fish: Catfish


    Ingredients:
    8 large Fish Fillets
    12 strips of bacon
    4 jalapeno peppers
    cheddar cheese
    salt and pepper
    butter


    Directions:
    Prepare 8 large fish fillets. Catfish is what I used in this recipe but any type of fish will work. The fillets need to be thick about the size of a large pork chop, around 1/2 to 1 inch. Butterfly the fillet like a pork chop and stuff with cheddar cheese, bacon, and jalapeno strips.
    Secure the sides of the fish with toothpicks or string, the kind used when roasting a ham.

    Glaze the fillets with butter so the top will brown and place the stuffed fillets into a baking dish or cast iron skillet and bake at 350 for about 12-15 minutes until golden brown.

    Other Notes:
    Serve 2 fillets per person with a fresh green salad and ranch dressing or dressing of choice. A cold glass of white wine works very well with this dish
