When I bought my 11-87 a few years ago it came with 2 barrels a 28" and a 24" what looks like a slug barrel. Question is It seems most people prefer a 24" barrel over a 28" barrel which is fine I know. But curious if I could change the choke tube in the slug barrel to FULL and use it in place for Turkey Hunting?

No the Slug barrell is for slug only use your shot barrell buy you a extra full choke and some turkey loads and have a blast.
If the shorter barrel isn't rifled, you can use it for turkey hunting. True slug only barrels are rifled. If it's a slick bore with a changeable choke you can use any type of shotshell you want.
My personal preference for turkey hunting is the shorter barrel with tru glo sights.
