Eating Sucker Fish

I have eaten gar, jim moyer talked me into it, told me it was the favorite fish of the seminol indians, had to use tin snips to get through the skin, and it is a very foul smelling fish and the meat looks nasty, but once you get past all that it has a very good flavor, very mild, guess I will try sucker next.

Im too young to remember but some friends gave my parent some when I was a kid. I think they were pressured cooked, then ground, and we ate them like salmon patties. My mother said they were good. Of course these werent just any suckers but the Redhorse variety.
