Nothin better than dolphin (Mahi Mahi). Well, maybe mangrove snapper, red snapper, grouper, tripletail, whiting, snook, black sea bass, door mats, redfish, triggerfish, speckled trout and my favorite, a fresh caught, frying pan size pompano breaded and fried whole (no guts) in lard grease.

I don't keep freshwater fish to eat, I just see to many pollutants like batteries, car parts, personal garbage in the creeks and rivers plus the mercury warnings. We hear of fecal matter being release into the small streams and rivers and that can't be good. I know many people eat freshwater fish and that's a personal choice....I just can't bring myself to do it.
I will eat most saltwater fish and have many favorites but my all time favorite is mahi mahi. We grill it after its been marinated in our home made recipe and it is the best I have ever had. Just had some the other night!!!!
