Tyme I did 16 turkey's for work and just oven roasted them. At home I've been using the old baking bags for the last few years. Cut up a couple apples(honey crisp's) and a little celery rosemary,tyme, throw it in the chest cavity and call it a day. Makes wonderful stock for gravy.
