Soak in buttermilk for an hour or two and bread with Ky Kernel (seasoned flour) and pan fry or buy McCormick Montreal Chicken Seasoning and follow the marinade recipe. Just marinade overnight and grill. You can also wrap a piece of bacon around the breast and secure with a toothpick before you grill or smoke them. Just be careful not to overcook. I check the internal temp and stop cooking at 175-180 degrees.
