I've always heard great things about Weisenberger but have never used it myself... I make it simple.

Pour white corn meal into a bowl. Season the meal with whatever (salt, pepper, lemon pepper, dill, etc...) Dip the fillet in a milk/egg mixture, coat in the corn meal, fry it up in Canola Oil. YUMMY!!!

I might have to thaw a bag out this weekend! I have 2 nice bags left over from November. I guess it's almost time to go catch more!!!
