Another vote for Canoe Ky. I have done that trip numerous times. The kayaks are fun - they are recreational Kayaks, so it doesn't require the skill of a typical kayak.

As for depth, it varies. There are stretches that are great to wade. I used to wade around the georgetown area, but there are some great long stretches around franfort - right off the main road that runs from Georgetown to Frankfort (I believe it is 460). Small spinners, grubs, shakey head w/tiny paca craw (I never used this - it wasn't too popular when I lived there, but I bet it would be a hot one). Or my favorite was fly fishing with poppers, crawfish, and helgramite immatations.

What I would do is buy a Kentucky Atlas and Gazetteer. It has all the streams, and creeks listed with species of fish that are present. One of my friends and I would find one, and travel to a different creek or stream every weekend. But we went to some I have never heard of. Sometimes it would work out, and sometimes it wouldn't, but it was always an adventure and fun.
