Try using braid with a flocarbon leader of about 4-6 feet. You must keep presure on the fish to keep them from throwing the hooks. You are correct, they will knock the crap out of them.

Back to back uni-knot. The braid should have 7 wraps and the flocarbon 4. That has worked the best for me.
Try using a siwash hook,we use them for salmon off the piers in michigan or if you have spinnerbait trailer hooks they work too.
