    need a good crappie recipe

Went out last week and got a good mess of crappies. The ole lady has never had fresh fish but is a very good cook! What is your favorite recipe for crappie?

I think with crappie, less is better. You can't find a better tasting mild flavor fish. We just rinse the fillets and dip in some buttermilk or milk/egg and batter with some store bought batter ( i like uncle bucks) or we really like using corn flake crumbs for breading. Drop them in the frying pan or deep fryer and your good to go.

I mix up just white corn meal and flour, 2/3 white corn meal and 1/3 flour. Coat fish and let sit 20 to 30 minutes in refrig and cook in about 1/4 inch of oil.

If you have a Gander Mountain handy, pick up a box of Shore Lunch breading. Best fried fish I ever ate.
