You have to remember there are lots of different species of shad. For instance, in Maryland you can catch American shad, which grow to about 20-24 inches, and are delicious to eat:

I've been in some "up-scale" sushi restaurants with gizzard shad on the menu.
I have had American Shad, down in Virginia where I am from, they eat it all the time, and actually have a very short season when you are actually allowed to catch them. We salted them, and ate them all winter, plus the season is when they are migrating to spawn, and the shad roe is excellent.
We used to see the Vietnamise down at the Barren spillway cathch and keeping shad all the time, probally would be sorta like sardines, but ugh, I have also ate carp they are ok if fixed correctally, and some people make patties out of them. Also not all sushi is bad I love the good stuff like from Shogun etc, not the kind on the buffet at chinese places, the Japanese do sushi the best, love the stuff. Shad might taste good as looks like all the other fish like to eat them.![]()
I am a civil war buff, and read alot about this subject, the night befor pickets charge at gettysburg, he dined on fried shad.
I have visited all fifty states, Canada, Mexico, Japan, Taiwan, Phillipine Islands, Thailand, Viet Nam, and Cambodia (I am not saying I have seen all of every one of them but I have been there) and I am here to tell you that some of the things that one group of people may consider unappatizing and/or unediable may be considered by someone else to be a dellicasy. I won't bother telling you about some of the things I hae eaten, but I am glad I didn't like some of them.

Many years ago, I went down to Lake Cumberland with my son. There is a place there where a sink hole collects water and occasionally fish when the lake is up. I have gone there on occasion to get bait the easy way with a hand net.ok , the other day i went to a spot on the river and caught myself about 25-30 shad and some skipjacks and there was a few guys fishing from the bank and they had several shad on a stringer, as time went on the guy said hey lets get home and clean theese fish cause im getting hungry.
now im no rocket scientist but i can almost guarentee that would be some of the nastiest fish you could ever possibly eat. has anyone ever seen this before or are people just un educated on what kind of creature they were taking home?? i have used them for bait for years and i couldnt imagine taking them home to eat. made my stomach turn just thinking about it.
My son and I pulled up there one day and this guy was barbecuing what he called BASS.
It was the shad I was looking for, to use for bait that night. I tried to tell him they were shad but he insisted they were bass. Strange thing was he had about 20 of them and none were big enough to have been kept under the regulations at the time. Plus there were more than the regs allowed and he knew it... but he was actually not breaking any rules...I finally gave up trying to explain it to him, and we went fishing.
It is possible they thought those were another kind of fish, OR, maybe they just know how to fix Shad so it tastes good.
