Hook up the winch, get back in the boat and stop the motor, then get back out and pull. I have had to do this several times when I pull the trailer in too far on a new ramp.

My trailer has the same sliders, if the ramp is steep I have the same problem. I run it up, leave it in gear and go lean over the front of the boat to hook it up. Go back and pull out of gear and shut it off, I would not recomend running it out of the water, you can do it for a short period of time but you don't really need to.
Be careful backing down in, never unhook the boat until it is in the water it can slide off the trailer while backing down the ramp with sliders.
