Put on those teflon bunker strips that help you load your boat easier. There was one problem I didn't consider. On an inclined ramp, I know thje boat will slide off the trailer, so steps are taken to prevent that. Problem, loading, if I run all the wqy to the front winch stand, the boat slides back down. The only thing I can think of, besides having a fishing partner, is to leave the engine engaged and running, hook up the boat and pull out, how long can you run a four stroke out of water safely?

Hook up the winch, get back in the boat and stop the motor, then get back out and pull. I have had to do this several times when I pull the trailer in too far on a new ramp.
take the strips off.
My trailer has the same sliders, if the ramp is steep I have the same problem. I run it up, leave it in gear and go lean over the front of the boat to hook it up. Go back and pull out of gear and shut it off, I would not recomend running it out of the water, you can do it for a short period of time but you don't really need to.
Be careful backing down in, never unhook the boat until it is in the water it can slide off the trailer while backing down the ramp with sliders.
Never tired the strips but seems like a bad thing waiting to happen as some have advised here.
try putting long lead on kill switch after ya get hooked up pull kill switch
Never, ever, ever, run your outboard without water. Just 5 seconds can ruin your impellor.
I love the strips on my 21' cc. I spend quite a bit of time in the saltwater, so ramps are often times "shallow" or not long enough before it drops off a ledge. All I have to do is get the tips of my bunks in the water, start the engine, and pull off. The same goes for putting on.
But to answer your question, if i'm on a good ramp I pull on the trailer, leave it in gear to hold it in place, and lean over the front to connect. You should be able to reach your winch and pretty much tighten it all the way up. Then go back and shut everything down as you normally would.
Oh BTW, for those of you who have the sliders, DO NOT unhook your boat until you are backed into the water. I have seen several boats on the ramp where guys have taken their straps off and the boat slides off the trailer. Same goes for those of you running rollers for your river boats. Be careful when you do unhook because your boat might try to slide off without you!
I put these strips on my bunk boards as well. Same situation in that the boat slid back off on steep ramps. I ended up using 2 strips on both sides instead of the 4 the package came with. Just enough to help the boat load but not enough for it to slide off the trailer.
