I've got a background in electrical engineering and that tells me just enough to say many factors are involved in what your picture will actually look like.
From my experience I can share-
a- I have a 32' HD TV that is only 1080i. I believe this means a 720P picture is upscaled to 1080format. Regardless, the picture is outstanding and I can not tell any difference between my Blueray player hooked to that TV and Direct TV. Both are outstanding and I'm very satisfied
b- I have a 50' HD Plasma that is 1080p. Before Insight 6.10 I could read several local stations in HD at either 720p or 1080i. It was clear that these were not 1080p pictures and I could visible see difference between them and blueray player. Both good but the realism difference was noticable. Now, we Dirct TV on that plasma I think I can still see improved picture quality with blueray but gap vs. most HD recording on Direct TV is not huge. I am very impressed with the directTV picture quality. that is not to say that Dish is not as good. I did look at my Dad's Insight HD DVR unit in Lexington area a few weeks ago and after review decided to roll the dice an go with something new. My recievers that came from DirectTv are better then what my Dad has; note his box may not be the latest technology anymore. I don't want to bash Insight but I saw no reason not to try something new.
