Sinker size also depends upon current. Obviously more means heavier.
I am big believer in circle hooks. But the one drawback I have found with them is the ability to use a big wad of bait. The stout ones just don't seem to have the gap necessary for a big wad of cut bait.
I like to use the meaty gutty center for cutbait but will use it all except the tail. The ttail will catch current and twist your line. If I am running a trotline I put a little of everything on it, both live bluegills and cut ones.
Even a small channel can eat a 1"x1" chunk of bluegill. I wouldn't be concerned with having a chunk too big.
