They've been hunted out west. I've never eaten one, but what I've heard is they're apparently quite good to eat, I believe they call them the 'Rib-eye of the sky".

There's been a ton of coverage on this over the past several months since the season was first proposed. It's seems to have turned into an argument of hunting vs. anti-hunting, rather than if the population of cranes can handle the proposed season & limits.
