Anyone feel free to take over this thread because Im not around much these days. Lard can country ham is our main thing along with the traditional turkey. To do the ham you will need a lard can or something big enough to boil the ham in with a tight lid. Next soak the ham overnight covered in water with 4 cups distilled white vinegar. Pour off the mixture and rince the ham in hot water and add back to the can, cover with water and add 1 two litre coke ( not diet ) and bring to a boil for 1 hour. Remove from stove and sit on several papers or magazines, wrap in a few blankets and tie tight. Let it sit for 24 hrs then remove and carve ( alot of fat to cut off first ). My hams are a hit everywhere I have taken them!My mom cooks the turkey so I dont have a recipe for that but my wife has a brocolli caserole recipe to die for ( heart attack in the making ).
