My wife is Asian (Chinese from Taiwan) and I have a company in Taiwan so I travel overseas a lot, (when I am not fishing of course). A lot of smaller fish that most don’t eat actually taste pretty good, I am a big fan of the whole fish cooked complete, it is much better than filleted meat only. You gotta learn to pick through the bones and only eat the eyeballs if you want (I do, wife don’t) but really they are good. I don’t know about a skip, but I have eaten a lot of different stuff and you would be surprised how good some of it is, and some not so good of course. Smaller fish are easier to cook whole or fry whole and most taste quite well.
Although you can’t eat a 12” red snapper in the US they are dang good on the plate elsewhere. A lot of the fish I eat over there looks a lot like what my bait was in Destin, FL last weekend.
