Grass Carp are going to be a little tricky vs. the Common Carp that I'm targeting around here. From what I've read they are more inclined to go after something that looks like vegetation vs. something that mimics a bug. There's an article in the current Florida Sportsman Magazine about Grass Carp and you may be able to find it on their website as well. Also, you can google "Grass Carp on the fly" and get some good tips/info on going after this fish.
So far this year I'm using a fly called "Barry's Spork" in the rust color. Last year I was throwing a rust "Backstabber" fly and both of these have been very productive patterns on these dudes.... I've used Rainy's Carp Teaser and that's a good pattern as well. Brown color has worked for me. For Common Carp anything that looks similar to a crawfish seems to be the "go to" fly....
I've never had the chance to fish for Asian Carp so I can't give you intel on those bad boys.... I think you just drive around and shoot them when they jump out of the water!12ga fly with #8's should work on those!!! hahaha
