    Every white and hybrid i have eaten has been delicious. Dont even worry about red meat. Deep fried is the only wayive eaten it, but the meat is probably goodanyway u cook it.

    they are as good as walleye, if you trim the red streak out. take 10 ounces of milk, 2 eggs, teaspoon black pepper, teaspoon salt, mix it together in a bowl. put your fish in the bowl, take another dish and put some potato flakes in it, take some olive oil and cover the bottom of a skillet about 1/4" deep, and when the oil gets good and hot, take the fish out of batter and dip it in the potato flakes, then lay the fish in the hot oil and let it fry until brown on the down side then turn it over and do the other side until it is good and brown also. then enjoy some of the best fish you ever had. they are as good as walleye and you old life long fish eaters can't tell them from walleye.

    I agree nothing beats Walleye as a fresh water fish.

    Saltwater fish I'd have to go with Grouper!

    I wouldn't want to spread this for every fisherman to see. I like to catch them more than like to eat them. But, If I do keep a few fish that don't want to swim off, I love to blacken them on the grill. All you need is some melted butter and some Cajun spice. I like Tony's. Dredge the fillets in the butter and coat liberally with the spice. Put it on foil that you have poked a bunch of holes in over the grill. The butter will melt down the holes and flame up. The fillets will be a dark brown to black. Even my wife and kids will eat fish when I fix it this way. You can also put the spice in flour and dredge the fillets in it and deep fry in oil. Almost as good. Still not as good as walleye, can't beat walleye.

    There is one freshwater fish that is better than walleye,that is the northern pike . If you know how to clean one and get the y bone out. Best fish swimming to eat. My wife don't like fish but she will eat them . I wish they were swimming in our lakes.

    i like to cook them just like Stripers. Cut out the red meat. I tried leaving it and did not like it at all. Dip the fish in warm beer and coat in Wiesenburger Mills dry fish batter ( sold at Kroger) then deep fry. i found it to be pretty darn good.
