When cleaning your reels, what is the general rule of thumb for what parts you grease and what parts you oil?

Grease the gears, oil the bearings.

Don't put grease in the levelwind worm gear/pawl. It will collect dirt and wear those parts down. Use just a couple drops of GOOD oil on those.
