Thanks, It's my late grandmothers recipet for corn bread and i showed it to the wife and told here to make pan cakes out of it. I myself I like cornbread crumbled in a bowl with butter milk on it. My grandmother only uses lard and bacon grease then cooks them in a old iron skillette I have all her iron cook wear.
If my doctor new i was eating this kind of food he would lay an egg LOL.

The only way to cook/eat fish, just have to be careful and not do it too often. Man, that sounds good!!

We rolled them in Andy's fish fry ( It's a little salty) They make 3 kinds I like the brown bag and red the red bag is a little hot for kids ,Or I just use yellow corn meal and a touch of flour salt and pepper to taste. I really don't put anything else on them like catsup or tarter sauce but I have been known to shake some hot sauce on them from time to time. Rather like it old school.
Now catfish is a little different story I use my Mothers beer batter.

    Re: bluegill fillets

I have pretty much a standard breading mix I use; 1/3 flour, 2/3 yellow corn meal with added salt and pepper to taste (or you can put salt and pepper directly on the the fish), which I prefer. Fry them up in some hot greese!!! MAN ON MAN!!!!

PS. I'm a firm beliver in catch and release, but just be sure to release some of them to the greese!!!!!!!!!!!
