It's going to be delicious however you prepare it. Baked, broiled, fried, whatever. Just be sure to remove the dark red strip down the center of the fillets before you cook them.

Prepare them the same way as white bass.

    1. Do not trim the red meat away.
    2. Soak the filets in a good quality beer overnight.
    3. The next day, remove the fillets from the beer.
    4. Throw away the fillets and drink the beer.

they are as good as walleye, if you trim the red streak out. take 10 ounces of milk, 2 eggs, teaspoon black pepper, teaspoon salt, mix it together in a bowl. put your fish in the bowl, take another dish and put some potato flakes in it, take some olive oil and cover the bottom of a skillet about 1/4" deep, and when the oil gets good and hot, take the fish out of batter and dip it in the potato flakes, then lay the fish in the hot oil and let it fry until brown on the down side then turn it over and do the other side until it is good and brown also. then enjoy some of the best fish you ever had. they are as good as walleye and you old life long fish eaters can't tell them from walleye.
