Umm, cause they taste good I'm mostly catch and release. However, if I deep hook a fish and don't think that it will survive, I'll take it home for dinner. I have been on extended fishing trips where we've kept a few for the table while there. Fresh fish just tastes better. Last time I did this we grilled up some Sea Bass within 30 minutes of catching them. Doesn't get much fresher than that! Also added a little something to the whole fishing experience for the week.
